Japan Sencha Jeido with Matcha catches the eye straight away. After brewing, it turns the water a beautiful green color, which is typical of matcha. It has an attractive fresh, naturally grassy aroma. There is a pleasant sweetness and subtle astringency in the flavor.
Origins
The two teas that complement each other so wonderfully come from Japan. They grew up in the Shizuoka province, famous for producing green teas all over the world. The plantations on the southern coast of Honshu are influenced by the humid subtropical climate, but the country's snow-rich winters are no exception. The cultivation of Chinese tea trees (Camellia sinensis) has a long history in this province. It dates back to 1241, when the monk Shoichi Kukushi returned to his homeland from China and brought back tea tree seeds. Today, tea gardens stretch across the foothills of the sacred Mount Fuji and tea is a national treasure in Shizuoka Province.
Sencha Jeido is an exquisite variety of sencha with carefully crafted leaves. The thin green needles are preceded by steaming with hot air. This stops the oxidation of enzymes. The tea leaves are then rolled, dried and graded according to quality. In the second stage of Sencha Jeido with Matcha production, sencha is dusted with high quality matcha. These are the finest tea leaves, which are processed by steaming, drying and cutting. The final step in the production of matcha is the slow grinding between granite stones. It is an extremely delicate and long process. The very fine powder, matcha, is used in the classic Japanese tea ritual.
