Origins
Sencha Fukujyu green tea comes from the Shizuoka area. The hilly tea gardens there tend to be covered in a misty haze, which, along with the fresh mountain air, provides the tea plants (Camellia sinensis) with just the right conditions to grow full-flavored tea leaves with high content of antioxidants.
When looking for Shizuoka on a map, focus on the central coast of Honshu. It’s the most important tea-growing area in all of Japan – more than 40% of Japan's production comes from here. The region is famous not only for its tea, but also for its breathtaking views of the sacred Mount Fuji, which add to the unique atmosphere of the local plantations.
Typical Japanese processing of tea leaves involves a short steaming process (approximately 30-60 seconds), which stops oxidation and preserves not only the fresh green color but also the valuable substances. This is followed by careful drying, sorting, and rolling into the needle-like shape sencha is known for.This method ensures that the freshness, tenderness, and typical umami flavor are preserved.
The result is a tea that, thanks to its natural and balanced taste, has gained popularity not only in Japan but also among discerning tea drinkers around the world. In 2021 alone, Japan exported over 6,000 t of green tea worth more than 20 billion yen. The United States is the largest buyer, followed by Germany, Taiwan, and European Union countries, where interest in organic teas in particular is on the rise. Instructions for preparation
- Pour 150-200ml of water (70-80°C) per 1 teaspoon of tea.
- When brewing in a teapot, add 1 extra teaspoon.
