Origins
When you say green tea, most tea-lovers add the word Fujian. Yes, the southeastern coastal region of China is home to many top-notch teas. especially green teas. How could it not, when the conditions for growing them are absolutely ideal. Bathed by the sea in the east, it can rely on abundant rainfall as well as mild winters. The summers are not too hot either, so the tea grows smoothly and at the right pace. Fujian's hilly areas provide excellent soil for tea plants and its farmers have dedicated centuries of experience to them. This is exactly the case with Jade Eyes Green.
This is a manually harvested tea. It's mostly women who head out to the plantations early in the morning, before the dew falls. They pluck the individual leaves and, most importantly, the silvery buds. Depending on their skill, they can pick around 20-30kg of tea a day. They usually put the leaves in large baskets or sacks and carry them from the tea gardens to the processing farms. There, the workers let the tea wilt, then heat it repeatedly to prevent oxidation, hand-shape it into "dragon eyes" and finally dry it.
Fujian farmers produce more than 280,000t of tea each year, from which people around the world make about 86 billion cups of this popular beverage.
