The Huang Da Cha yellow tea produces a beautiful yellow-orange infusion. Your taste buds are in for a treat full of notes of chocolate, coffee and nuts. The aroma is sweet and very pleasant.
This tea is also perfect for making a refreshing iced tea. Just pour the tea over some ice cubes and top with a slice of lime or a sprig of fresh mint.
Origins
Chinese yellow teas were produced for the use of the imperial court. Their truly enchantingly delicate taste and special secret method of production make them perfect for special moments. They are rarely found on the market, so tasting them is an rare experience. Some tea lovers say that the more often they drink yellow tea, the more they like it. We brought the so-called "Big Yellow" from the Anhui Province.
The inland part of the People's Republic of China was founded in the 17th century. January temperatures in the province hover around 0⁰C, while July reaches a pleasant 27⁰C. Strong summer rains cause frequent floods.
The local landscape is incredibly varied – we can find both hills and vast plains, rivers, lakes, places with high population density and areas of beautiful nature. According to china.org.cn, Anhui's highlights include the Ming Dynasty Mausoleum, Emerald Valley, Taiping Lake (the largest local artificial lake with peninsulas and wild animals), Xidi Ancient Village (300 buildings dating back to the Ming and Quing dynasties) and Tianzhu Mountains (a natural complex of 45 peaks, 17 ridges, 22 caves, 18 waterfalls, canyons and cliffs).
Huang Da Cha is one of the first yellow teas made by Chinese Buddhist monks. Its primary purpose was to provide long-lasting concentration during meditation, and this intention was a 100% fulfilled. This very gentle tea has the ability to induce inner peace and harmony as well as help maintain focus.
The vast majority of yellow teas come from China. However, China focuses primarily on green teas, so yellow teas are only available in limited quantities. They are produced in a similar way to green teas, but with an extra step. After plucking the young tea buds and the nearest delicate leaves, they are left to wilt and then they are heated and rolled. Now comes the 'mystery' step: the tea is left to rest for 5-27 hours. The drying process is also interesting – the harvest is spread out in thick layers, covered with a sheet and slowly dried for 2-3 days. The truly delicate process of yellow tea production has been guarded by the owners of each tea garden for generations.

Instructions for preparation
Pour 150-200ml of boiled water (70-80°C) per 1 teaspoon of tea.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 3-5 minutes, then remove the strainer.
This tea can be steeped up to 3 times.
