Benefits of vanilla
Christmas rolls and summer ice cream. That is probably just a fraction of all the goodies you think of when you say the name of a beloved condiment. Let alone if they were made from a real vanilla. Because it can easily be substituted.
The Aztecs knew how to indulge. With the original vanilla variety native to Mexico, they regularly enjoyed a drink made from a blend of spice and cocoa. From the beginning, vanilla was rare and highly prized, so it took a long time to find its other varieties. And they were found. One is the Bourbon-Madagascar, and the other is Tahitian.
The vanilla tree is, surprisingly to many, an orchid that produces dark-coloured pods. Their harvesting is a precise affair. Not only is it done by hand, but timing is crucial. Inside each pod is a large number of tiny seeds, which must be just ripe enough not to burst while at the same time already possessing all the desirable qualities. Moreover, the bigger the better for the pods. Therefore, it is a test of patience for any grower.
Most often you will come across vanilla in the form of an extract. It contains vanillin, which is the essential substance of vanilla, but it is still only an extract. So be sure to try adding vanilla beans directly to your food or drink at least once in a while. Or check with the goods you buy to make sure they have not been stripped of this delicacy, or worse - that they have not been completely replaced by a synthetic version of vanillin. The price of a true vanilla is higher, but the resulting taste and aroma are worth it. It is interesting, for instance, in tea blends, to which it adds a velvety and intoxicating element.
