You can recognize Fujian Green Monkey green tea by its mild, smooth and sweet taste. The infusion is a pale yellow-green color with a grassy and faintly fruity scent.
Origins
The history of Fujian Province (also known as Hokkien) dates back to the Neolithic period, 6,000 years BC. According to archaeological findings, its inhabitants worked stones, shells and bones to make tools, and have even been shown to weave and use the wheel. China's Fujian is still a culturally rich area today, thanks in large part to the several waves of migration that have affected it. It is the most linguistically diverse region in China. Locals say that "In Fujian, the culture changes after every 5 miles and the language after every 10". The population is also noteworthy, with 37,7 million people living in an area of 121,400km2.
As far as geography is concerned, the province in southeastern China is mainly dominated by high mountains with dense forests (it is the most forested region of the country) and tranquil mountain streams and wild rivers. The subtropical climate, with mild winters and summer typhoons, supports the cultivation of many crops such as bananas, pineapples, lychees and, of course, rice and bamboo.
But above all, let's not forget tea. Fujian is characterized by its diverse production, exporting both excellent oolongs and white and green teas to the world. In particular, Fujian Green Monkey is one of the best green Chinese teas you can taste. It comes from wild-grown Chinese tea trees (Camellia sinensis). Its fluffy leaves have been processed by hand with great care. They are only partially rolled, so they retain a lot of their natural aroma and flavor, as well as valuable antioxidants.
If you're wondering where the tea's name comes from, here's an explanation: supposedly, it used to be harvested from such great heights that only trained monkies could access it. Hence Green Monkey.

Instructions for preparation
Pour 150-200ml of boiled water (70-80°C) per 1 teaspoon of tea.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 2-3 minutes, then remove the strainer.
It can be steeped up to 3 times.
