Origins
The history of matcha tea dates back to the Chinese Tang Dynasty (618–907 AD). You may be interested to know that at that time, people steamed tea leaves and formed them into tea bricks, mainly for easy storage and trade. Tea was prepared by roasting these bricks, grinding them into powder, and mixing them with hot water and salt.
The practice of whisking finely ground tea leaves in hot water dates back to the Song dynasty (960–1279 AD). Tradition has it that Zen Buddhist monks adopted the ritual and brought it to Japan around 1191. And while the popularity of ‘powdered tea’ declined over time in China, in Japan matcha became an integral part of Zen monasteries and the upper classes.
As a result, the production of matcha-type green teas attracted a huge number of Japanese tea gardens. These include those in the Kagoshima region at the southern tip of Japan. It’s currently the second largest tea producer in the country, right after Shizuoka. Kagoshima is characterized by active volcanoes that enrich the soil with extremely fertile volcanic ash. Thanks to its subtropical climate with mild temperatures and high rainfall, it’s literally a promised land for tea growers. A significant portion of the tea plantations operate under organic farming methods and produce high-quality matcha, prized for its rich flavor and aroma.

Instructions for preparation
- Add half a teaspoon of matcha per 100ml of boiled water (75°C).
- For best results, heat up your glass or bowl before adding matcha powder.
- Whisk or stir vigorously until a thick foam forms.
