Origins
What does Shui Xian actually mean? The name of the tea can be translated as either "water immortal" or "daffodil". Both terms symbolize elegance and immortality in Chinese culture, based on the legend that Shui Xian tea was discovered by a mythological figure who wandered through the Wuyi Mountains and came across a plant with a unique aroma and taste. This discovery was considered a blessing bringing longevity and vitality. And in his honor, the tea was named Shui Xian.
Having mentioned the Wuyi Mountains in Fujian Province, let us also add that this is an area known for its terraced plantations, which provide ideal conditions for growing quality oolongs. Of course, the altitude of 1 100m plays an important role in the healthy growth of the tea plant (Camellia sinensis) – it allows the shrubs to enjoy cooler temperatures and higher humidity, so that their leaves can develop the delicate floral aroma that is characteristic to Shui Xian.
In addition to the tea plantations, tourists admire the steep cliffs, deep ravines and diverse flora and fauna. The picturesque scenery includes not only magnificent mountains, but also rivers or vast forests. Huge rock formations resembling dragons are considered to dominate the landscape. No wonder they are associated with legends and stories by the locals.
Tea has been cultivated in these mountains for over millennium and is even said to be the cradle of Chinese oolongs. In ancient times, they were an important center of tea trade and Wuyi tea was considered of such high quality that it became part of the tribute gifts to emperors during the Tang and Song dynasties.
The process of Shui Xian production has not changed much over the centuries. It starts with the harvesting of the tea leaves, which must be gently rolled as quickly as possible to allow them to undergo the natural oxidation process. This gives the future tea its signature taste. The leaves are then dried and warmed up, which ensures their stability and long shelf life.

Instructions for preparation
- Oolong pour water at a temperature of 80-90 ° C, in a ratio of 1 teaspoon per 1.5-2 dl.
