Origins
In the southwest of the People's Republic of China lies the vast province of Yunnan. It's a region marked by mountains, highlands, beautiful countryside and, of course, tea plantations, and not just any. Some of China's finest teas come from here, and one of them is White butterfly.
White tea itself has a tradition in Yunnan that goes way back. Its more significant production began during the Sung Dynasty, between the 10th and 13th centuries, and for a long time it was a purely Chinese speciality. The leaves come from the native Camellia Sinensis tea tree. To preserve the strength and quality of the tea, it must be harvested during the first flush. As soon as the first young buds appear on the tree, they need to be picked very carefully within 48 hours. They are then spread out in the sun and left to dry freely without steaming or shaping.
White tea as such is relatively rare due to the time required for harvesting. Yunnan White butterfly, however, is a rarity. It is processed in a small farm in the middle of the mountains, where everything is based on precise handwork. The quantity of this tea produced each year is very limited, making it very difficult to find. But the extra effort is worth it. The experience is the appearance of the tea itself.
The impression of the lace-like spirals of each leaf is enhanced by the intoxicating aroma, which is completely unique. The subsequent enjoyment of the infusion is pleasantly light and soothing, just like the flight of butterflies.

Instructions for preparation
Pour 150-200ml of boiled water (70-80°C) per 1 teaspoon of tea.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 2-3 minutes, then remove the strainer.
