Origins
The secret of Pu Erh lies in aging. From old Chinese tea trees (Camellia sinensis), workers hand-pick the succulent green leaves and transport them to the processing site. They let them wilt slightly and then heat the tea in large pans to stop the natural oxidation of the enzymes. They then roll and shape it. This produces regular tea. But if are to make an authentic Pu Erh, the leaves need to be piled up in in humid and warm environment. The tea then begins to ferment and age thanks to bacteria and fungi on the mature leaves.
In the case of Green Pu Erh, there is no final fermentation. The green tea leaves have been pressed into a tea cake, which in China is called bingchá. It was then aged in a warm and humid environment. This helped develop and refine the flavors of the tea.
The history of Pu Erh dates back to the Han Dynasty. Some Chinese emperors loved it, others despised it. For example, the first Ming emperor explicitly banned the pressing of Pu Erh because it wasted too much time the peasants could spend elsewhere. Only the sale of loose tea was allowed. The last Chinese emperor, on the other hand, referred to it as "a member of the royal family".

Instructions for preparation
Cut approximately 1 teaspoon of Pu Erh.
Cover with 150-200ml of water (90°C).
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 2 minutes, then remove the strainer.
