China Sencha is suitable for both casual drinking and special occasions. The infusion has a bright yellow color, the taste is slightly astringent at first, but evolves into a pleasant sweetness that's slightly floral at the end. Sencha smells fresh and grassy.
Origins
Everyone who has ever roamed the world of fine green tea knows China's Zhejiang province. The hilly landscape on the country's east coast is home to several hundred cultivars of Chinese tea trees (Camellia sinensis), from which local families produce a range of varieties, from gunpowder to Dragon Well to sencha.
We brought this particular sencha from the Shaoxin City Prefecture. It lies in the north of the province and has a rich cultural and natural heritage. An ancient region with a history spanning more than 2,500 years, it attracts tourists from far and near. The so-called "Venice of the Orient" is characterized by hundreds of bridges and the authentic atmosphere of a quiet water world. In addition to the famous rice wine, markets, gardens and monuments, people also visit Shaoxin for its delicious green teas.
Sencha is grown on sunny plantations. The tea leaves are usually harvested by women and girls before the morning dew has even fallen. The leaves are left to wilt briefly and then steamed repeatedly. This step is uncommon for Chinese tea (most local green teas are heated in large pans, giving them a subtle smoky aroma). Steaming stops the fermentation, and the tea is refined, dried and sorted.
Green teas are highly valued in Asia. They have become a part of the culture there and a way to provide the body with antioxidants, minerals and vitamins. With its medium caffeine content, green tea helps fight fatigue and promotes mental and physical well-being.

Instructions for preparation
Pour 150-200ml of boiled water (70-80°C) per 1 teaspoon of tea.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 2-3 minutes, then remove the strainer.
This tea can be steeped up to 3 times.
