China Misty Geen tea is a flavor chameleon. The taste will depend on how you prepare it. In general, it will be sweet, slightly grassy and very harmonious. The hot beverage has a more pronounced herbal note and the sweetness is definitely not lost. Cold tea is much softer to silkier, capturing the enchanting flavor of umami. Of course, it retains its sweetness and typical grassy notes. The infusion has a light yellow to yellow-green, beautifully clear color.
This tea is extremely well suited for cold brew. A long, slow extraction will ensure the maximum flavor and aroma.
Origins
Zhejiang is synonymous with tea. One of China's top tea locations gives the world top harvests of all sorts of tea varieties. And among them, one that stands out for its wonderful flavor, delicious aroma and, what's more, it's different every time it's prepared. China Misty Green is grown according to an ancient tradition, with no industrial fertilizers, pesticides or insecticides. It brings to our cups the freshness of the Jinhua Mountains, covered in deep forests that shroud the tea plants in mist, protecting them from the high temperatures and strong sun of the subtropics.
China Misty Green is brought to us from Organic Taishan Garden. They plant tea trees at altitude at around 800m. The leaves are harvested between April and July and, as with other green teas, go through a clearly defined process. It starts with wilting the leaves, then comes short heating (to stop fermentation), rolling, shaping and drying. The result is a tea of firm leaves that tend to be wiry or curly and have a dark green color.
Before we get into the different ways of preparing it, let's stop by the story of China Misty Green. It is associated with the Taishan Temple, where a monk planted several bushes of Chinese tea plants (Camellia sinensis) on top of the temple mountain around 963 AD. Because he was a very hardworking monk who tended the small tea garden day and night, Buddha honored him with a visit and made him the guardian of the mountain. Since then, the Organic Taishan Garden has been under the protection of Buddha and has managed to grow absolutely amazing tea.
There are two ways to enjoy it. We, like many other tea lovers, recommend preparing it in cold water.
- Add 6g of tea leaves into a teapot and cover with 1l of fresh, lukewarm water. Leave to infuse for example in the fridge for at least 8 hours. The length of the infusion depends on your preference, as the flavor will differ from hour to hour.
- Add 2g of tea leaves into a teapot and cover with 150ml of hot water. Steep for 1-2 minutes. This procedure can be repeated twice.

Instructions for preparation
Pour 150-200ml of boiled water (70°C) per 1 teaspoon of tea.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 1-2 minutes, then remove the strainer.
