Origins
You can also buy high quality Chinese tea called Dragon Well as Lung Ching, Dragonwell or Long Jing Xi Hu. It will always be the same delicacy: a green tea with typically flat leaves and a delicate flavor. It earned its name from a dragon residing in the well, to which a poor Chinese taoist went to beg for rain. We have no idea what he promised in return, but in any case he is said to have managed to persuade the dragon to envelop the drought-ridden countryside in clouds and bring it the moisture it needed.
The Dragon's Well is made from the leaves of the finest Chinese tea trees (Camellia sinensis) that grow in the foothills of the Zhejiang mountains. Traditional farming families take care of the tea gardens, their prosperity, harvesting and green tea production technology. They keep their secrets, which make Lung Ching Tea still unrivalled and original. After harvesting, the leaves and tea buds are left to wilt and then roasted on large heated pans. They are pressed against their walls, tossed and stirred with artful movements. This gives them their flat shape, beautiful color and subtle smoky aroma.
