Origins
This traditional variety of Chinese green tea is characterized not only by its delicious taste and fruity aroma, but also by its appearance. The leaves of China Chun Mee (also known as Zhen Mei or Chun Mei) are rolled into small arches that resemble eyebrows. They are said to be the eyebrows of Chinese beauties or porcelain dolls. The Camellia sinensis tea trees from which they are harvested grow in the inland province of Jiangxi. It is a hilly area bordered by mountains with a climate dependent on altitude. It is generally a place with subtropical temperatures and high humidity. This is crucial for the growth of tea bushes. Jiangxi teas are lush green, extremely fragrant and often, even when unfermented, reach the strength of black teas.
The harvest takes place early in the morning so that the dew does not fall on the tea leaves, which would cause them to steam and raise the temperature undesirably. After picking, the leaves are wilted and hand-rolled into a small needle shape with a slight curve. Everything takes place under very strict conditions – the temperature must be stable, the workers' nimble hands precise and coordinated. The finished Chun Mee go to drying and sorting.
