Yerba Mate Floral Symphony gives a bright, light yellow infusion. It smells of fruit and herbs, and in the taste, you can identify the typical earthiness of yerba mate and the freshness of exotic fruits. Notes of guava, passion fruit and lychee are the main notes.
Origins
Traditional, phenomenal, rediscovered. Yerba mate has acquired a variety of attributes in recent years. In Europe, it is becoming increasingly popular, unlike in South America, where it has been known since the time of the Guaraní people.
Let us talk about maté. The drink, made from the leaves of the Paraguayan holly (Ilex paraguariensis), is popular in countries such as Argentina, Uruguay, Paraguay and Brazil. It is served in a maté gourd (a container made of dried fruit of the calabash tree) and drunk with a bombilla (a metal straw). It is sure to get the blood pumping and invigorate your tired mind. It contains theobromine, theophylline and caffeine. Native Americans made maté mostly to fight off fatigue.
But it is a long way from harvesting Paraguayan holly leaves to drinking mate. The leaves and twigs of the evergreen tree are harvested either manually or mechanically and stuffed into sacks. But that is only the beginning of the process. By being stuffed and sealed, the plant material begins to ferment, changing its color, smell and, of course, taste. Once fermentation has reached the required level, the workers empty the yerba maté from the bags, dry it and return it to the bags again. There, it matures for up to 2 years. Only then can it be ground, sorted and packaged, and sold.
Of course, making such a unique drink includes a small ritual. First, you need to add the dry leaves into the maté gourd and covered with cold water to re-hydrate them. Only after straining that do you pour in hot water and insert a bombilla – a straw and strainer at once. Every maté lover has their own little routine. What about yours?

Instructions for preparation
Add 1-2 teaspoons of mate per 200ml of boiled water (70-80°C).
Steep for 3-5 minutes. Longer times make for stronger brew. Do not steep longer than 5 minutes to avoid bitter flavor.
Optionally, flavor with lemon or maple syrup.
Mate can be brewed multiple times.
