Origins
In order for matcha, a finely ground powder made from high-quality green tea leaves, to achieve this degree of delicacy and lightness, you need not only the perfect natural conditions but also gentle, experienced handling honed with years of practice. The former is provided by the Chūbu region, specifically the Tōkai subregion, where Aichi Prefecture and its famous Nishio area are located. This delicate matcha comes from young leaves local to the region. The latter is provided by experienced farmers and tea masters.
The climate here is mild and humid, with frequent morning mists that are perfect for the tea plants. The plantations are located at an altitude of 50-200 meters above sea level, in an environment that promotes the production of amino acids, especially L-theanine, in tea leaves. This is responsible for the delicate sweetness and balanced flavor of matcha. Before harvesting, the tea plants are shaded for several weeks, which further increases the chlorophyll and amino acid content. The result is an intensely green color of the leaves and a rich, sweet umami flavor.
Nishio is one of the oldest and most important centers of matcha production in Japan. The history of tea cultivation here dates back more than 800 years. The leaves are still processed using traditional methods – workers steam, dry, and carefully grind them on granite stone mills, which ensures the fineness of the powder and preserves its valuable substances.
Matcha from Nishio is rich in caffeine and L-theanine, as well as catechins, powerful antioxidants that protect the body from free radicals. Thanks to this, matcha has long been used not only as a drink in tea ceremonies, but also as a means of promoting concentration and vitality.
