The infusion and taste of tea

The emerald green infusion with its subtle reflections surprises with a delicate yet full flavour whose elegant notes have a slightly fruity-sweet character with a touch of umami.

Origin of the tea

The Kirishima region, located in Japan's Kagoshima Prefecture, which includes the city of Makizono, is known worldwide for its green tea. This is due to the specific climatic conditions, which mean that the tea plantations are often covered by a fog roof that protects the young leaves from too much sunlight. The soil, which is extremely rich in the necessary minerals, then gives tea its unique properties and ensures that tea plants can grow naturally, without special human intervention.

Shincha literally means new tea. It is created from the very first picking of spring leaves. It begins in Kagoshima, the southernmost part of Japan. The youngest tea leaves are absolutely extraordinary. They are the epitome of freshness, freshness and a wonderful sweet flavour, which nevertheless has the familiar umami we associate with Japanese green teas. The leaves retain a high nutrient and tein content thanks to their early harvest. It is a true rarity, which is why the growers not only hand-pick the tea, but also subsequently roll it into thin, dark green needles.

To ensure that the resulting shincha loses none of its unique qualities, it is transported to market as quickly as possible. This is why it is sometimes called "flight tea". The Japanese believe that if you drink your shincha on the 88th day after the vernal equinox, you will be healthy all year round. However, a cup of this organic rarity with its rich and elegant taste will give you a luxurious experience anytime.

We pack our teas in a strong, zip-lock aluminum packet which allows you to easily re-seal its contents. This container protects the quality of the tea against humidity, light or foreign odors, all of which could noticeably affect the quality of the brew.

Preparation

Temperature 70-80 °C Preparation time 2-3 minutes Amount 1 teaspoon for 150-200 ml

Instructions for preparation

  1. Saturate the shincha in a ratio of 1 teaspoon per 1.5-2 dl of water. For making tea in a teapot, add an extra 1 teaspoon.
  2. Shincha should be poured over water at a temperature of 70-80 °C. Pouring water at a higher temperature may result in a worse taste and aroma of the tea.
  3. Leaching time 2 - 3 minutes (covered cup), then strain.
  4. Shincha can be left to infuse 3 times.
