Origins
Sencha is undeniably one of the most popular types of green tea not only in its homeland. Translated, its name means roasted tea. However, this name is a little misleading. It is in fact a tribute to the ancient teas of China, which to this day stop the oxidation of the leaves by roasting them in pans. In Japan, however, steaming is used for the same purpose, so the leaves retain their beautiful hue and really rich flavor and aroma.
Sencha Asagiri comes from Kagoshima Prefecture, whose symbol is the active volcano Sakurajima. The soil there is incredibly rich in minerals, which, combined with the warm climate, creates ideal conditions for the organic cultivation of fine tea plants. The absence of added chemistry, natural growth and drawing everything it needs from the surrounding beautiful nature is evident in Sencha Asagiri and definitely suits it.
With its deep green and slightly wavy leaves, is considered to be a representative of the higher quality class. Harvesting occurs regularly during May, exclusively on sunny days. Of course, the leaves are hand-picked so that only the best quality leaves can be selected and then left to rest. This allows the sencha to ripen, losing the unwanted grassy notes and leaving only a beautiful aroma and fresh flavor with umami dominance.

Instructions for preparation
First infusion:
Pour 115ml of boiled water (90°C) per 3g of tea.
Covered, steep for 1 minute, then remove the strainer.
Second infusion:
Pour required amount of boiled water (95°C) over tea leaves.
Steep for 1 minute.
Third infusion:
Pour required amount of boiled water (95°C) over tea leaves.
Steep for 2 minutes.
