Raisins are dried grape berries. Seedless grapes are used, and the largest producers in Europe are Greece, Spain and Italy. However, these producers are surpassed by the USA, specifically the state of California, and closely followed by Australia. Raisins have a long history, dating back to 2000 BC, and are mentioned in the Bible. Ideally, drying takes place right at harvest time, when the selected grapes are left to dry naturally and slowly in the sun (directly on the vines). However, in the case of American raisins (due to greater demand), the process has recently been mechanised. In this case, the harvested grapes are washed, scalded with hot water and then dried using an intense current of warm air. During this process, a harmless chemical substance in gaseous form is applied to the raisins to prevent oxidation and caramelisation. The golden (mainly American) and brown (European) forms of raisins are the most common on the market. The colour is determined by the processing. Careful selection of the grape variety has an impact on the quality and taste. Their uses are varied, although they are mainly found in gastronomy. They are popular in sweet pastries but also make a refreshing appearance in tea blends. Do not forget about the relatively high sugar content when consuming them, so everything in moderation.
