Benefits of kukicha

You poured kukicha into the sieve, and something is missing? Where are the leaves, the flowers or at least the dried fruit? It just looks like chopped stems. And that is the way it is supposed to be.

Kukicha, also known as peasant tea, is a typical Japanese speciality. It contains dried, chopped pieces of stems and twigs from the Chinese tea tree. Therefore, it is of the same plant origin as traditional teas. Fermentation takes place at the level of green tea, but the resulting taste is more nutty and floral. Probably the earliest reports of twig tea come from the Uji area near the better-known city of Kyoto. Originally, it was a ''leftover'' tea made by villagers after the collected tea leaves were sold. Gradually, however, the preparation of kukicha has been refined, and today it is a delicacy. In Japan, you may occasionally encounter a stigma of inferiority regarding this tea, but the western part of the world is already aware of its immense benefits.

The infusion has a fresh green colour and a pleasant aroma. The caffeine content is not too high, so pregnant and breastfeeding women or children can enjoy kukicha.
