Origins
Rarely in the People's Republic of China would you find more favorable growing conditions for oolong than in its homeland, the island of Taiwan. Yet it has been done. For tea connoisseurs, that area is the renowned Yunnan province, specifically the Simao region with its vast Wuliang Mountains.
The local climate is so similar to Taiwan's that it has encouraged the cultivation of special tea plants suitable for oolong production. The relatively frequent temperature changes and the dense, impenetrable fog enveloping the trees prevent the budding leaves from growing quickly. This is not a bad thing at all, on the contrary. It gives them plenty of time to absorb the many substances behind the tea's unique and delicate flavor.
Oolong, still called wu-lung in China, is somewhere between green and black tea, although it has more in common with green tea. You will also find blends similar to red tea. In short, there is something for everyone. It is just the degree of fermentation that counts. This tea is prepared using the traditional method.
The harvested leaves are left to rest in direct sunlight and then repeatedly shaken by hand in bamboo baskets. The leaves are then shaped again by hand, which in the case of Highland oolong produces tiny pea-sized balls. At the end of this procedure, the tea is heated, and the heat treatment length determines Oolong's character. In our case, it is a slightly oxidized tea that retains its tenderness and delicacy.
Highland Oolong China comes from small plantations of small-scale Yunnan growers. Because of its demanding soil quality and climate, it is a true rarity not widely available on the market. Instructions for preparation
- Pour 150-200ml of boiled water (80-90°C) per 1 teaspoon of tea.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 5 minutes, then remove the strainer.
