Origins

The Anxi region in the southern Chinese province of Fujian is famous for its oolong production. A family tea garden from which our tea comes has specialized in this type of oolong for decades. However, less is sometimes more. Therefore, they have opted for cultivars that produce extremely high-quality leaves but only in limited quantities.
Tie Guan Yin is considered by many to be a highlight among oolongs. Legend has it that once upon a time, a poor farmer walked day after day past a temple with an iron statue of the goddess of mercy named Guanyin. He watched sadly as the shrine became a ruin. He couldn't repair it completely, but he decided to sweep the shrine and work with incense twice a month. After some time, the goddess appeared to him in a dream and sent him to a nearby cave for a treasure, which he was to share with others. The next day, the farmer discovered a sprout of a plant. Soon it grew into a beautiful tea bush from which the best tea in the country was made. The peasant named the oolong after his protector, Iron Guanyin, and shared it with his neighbours. Together they repaired the temple, and the whole region has been fortunate ever since.
Like other oolongs, this extraordinary Tie Guan Yin begins its journey in the sun. The petals naturally wither and begin to oxidize. They are then curled into small, irregular shells and dried. In the case of this tea, however, the whole process is completed by roasting on black charcoal. It gives it a distinctive and unique flavor and aroma, combining flowers and caramel with a light, delicate trace of roasting.

Instructions for preparation
Pour 150-200ml of boiled water (80-90°C) per 1 teaspoon of tea.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 3-5 minutes, then remove the strainer.
