Benefits of yacon
If you are craving new dining experiences, you may have heard of Yacon. Its tubers are used as a side dish and are reminiscent of sweet potatoes. However, the other parts of the plant may also be interesting to you.
The Yacon is a perennial star-shaped plant that can grow up to two metres tall. The meaning of its name comes from the South American dialect of Quechua, where it means ''water root''. You would find it in the northern and central Andes region, specifically from Colombia to the upper part of Argentina. For the people there, the Yacon (which is called the Peruvian round apple even though it does not resemble it in shape or form) is a rewarding source in gastronomy. Its roots, as we have already mentioned, can be eaten like sweet potatoes, even raw. They are also pressed into syrup and made into a powder. Due to its high fructose content, Yacon is often used as a natural sugar substitute.
In recent years, it has gained popularity outside South America. Its cultivation is spreading to Australia, the USA and Japan. Dried Yacon leaves are finally coming onto the market, and although they do not have such a sweet taste, they make up for the benefits. And an infusion of them can be enjoyed in reasonable quantities by everyone.
