Forget the sleek plantations with rows of manicured tea trees for once. For a true and extremely rare treasure, you must head to the cradle of Chinese teas – the Yunnan region. There, in the middle of the forest, wild tea trees are hidden and the infusion made from them is nothing but the best.

The tea is surprisingly light to clear in color compared to classic green teas. A mild, yet complex and fresh flavor with a more pronounced floral element.
Origins
When the Yunnan region is mentioned, Pu Erh tea lovers perk up. But this province full of mountains and highlands in the south of the People's Republic of China is also home to some of the finest white, green and black teas. This is due, among other things, to the local warm climate with plenty of moisture and soil with a wealth of nutrients and minerals that permeate right down to the tea leaves themselves.
You'll usually find tea trees here that are several hundred years old, but the real rarity are those hidden in the forests and nature reserves in the areas around Lincang, Baoshan and Dehong. These are the original ancient tea trees of the special Camellia Assamica Dehongesis variety. Compared to the common Camellia Sinensis variety, they grow to an impressive 10-15m.
As a wild variety, it draws everything it needs from the forest system. There is no human intervention except for harvesting, so the trees naturally live in the company of moss, lichen and an incredible flood of flowers. All of this greatly influences the quality of the buds that wild tea trees produce. The tea produced is then unique in taste and aroma compared to that from single species plantations.
Early spring, workers head out into the rainforest thicket. It's a very difficult harvest. Not only does the journey itself often take several hours, but each mature tree has to be climbed carefully so as not to damage itself. Moreover, the most experienced carry out the whole process before dawn, until the buds are completely closed. This is the only way to achieve the highest quality of tea without losing the final charm, even with minimal unfurling of the leaves.
The harvested buds are then carefully broken down and left to dry in the sun. The resulting green tea is a truly unique affair in which you can fully enjoy the fresh play of flowers with the light scent of pine needles.

Instructions for preparation
Pour 150-200ml of boiled water (70-80°C) per 1 teaspoon of tea.
When brewing in a teapot add 1 extra teaspoon.
Covered, let steep for 2-3 minutes, then remove the strainer.
