Origins
There aren't many oolongs that have been roasted. To understand how and why they’re rare, let's take a look at their unique production process.
Roasting oolong tea over charcoal is one of the traditional techniques. It’s referred to as "Charcoal Roasting" and although this process has a long history, it’s becoming increasingly rare. After the manual, careful harvesting and processing of the tea leaves, which involves rolling and partial oxidation, comes roasting. Workers scatter the leaves on special grates suspended over heated charcoal. They can then roast them slowly and very gently until the tea has acquired the desired aroma and color. They usually use the wood of fruit trees, either apple or pear, for roasting. The choice of wood is very important as it affects the final taste of the tea.
There is no doubt that the temperature and the length of time the leaves stay in the fragrant smoke also play an important role in the process. Roasting for too long or too intensely can make the tea bitter or give it a 'burnt' smell. On the other hand, inadequate roasting can mean poor flavor development.
China Oolong Roasted Charcoal Se Chung is imported from Fujian Province located on the southeast coast of China. With a subtropical climate and an average annual temperature of around 18°C, the area offers ideal conditions for growing high-quality tea. Tea plantations are mostly located in the mountainous areas of the province, at altitudes of around 1 100m, which contributes to the delicacy and complexity of the flavors of the teas.
One final note: Remember that oolong teas can be brewed repeatedly. Each new infusion will offer you new flavor nuances. You'll discover different layers of flavor – from a subtle roasted aroma to deeper, richer notes. Instructions for preparation
- Oolong pour water at a temperature of 80-90 ° C, in a ratio of 1 teaspoon per 1.5-2 dl.
- To prepare tea in a teapot add 1 teaspoon extra.
- Leaching time 5 minutes (covered cup), then strain.
